Sault and the lavender fields of Provence

Sault is a medieval town built at 766m above sea level. It is home to an old fortified castle and ramparts and middle age and renaissance houses. With its narrow streets and squares, the town caters well to tourists and offers a good choice of restaurants, bars and shops. From the centre, there is a beautiful viewpoint looking out over the valley, a patchwork of Provence lavender and cereal fields and grazing sheep in the spring and summer.

Cycling holidays through the lavender fields of Provence

The best time to enjoy a Provence cycling tour in and around Sault is in May and June time when the lavender is in full bloom. You cycle up to Sault from the plains, through peaceful villages and the gently rolling hills of purple lavender. Sault is famous for its lavender and every year on August 15th, the town hosts the 'fête de la lavande’ – the lavender festival with parades through the streets, lavender sickle cutting competitions and market stalls selling local artisan produce. 

Provence lavender self-drive walking holidays

We have created a self-drive tour of the Provence lavender fields (highly recommended between end of May and mid to late July). A real Provence experience, it doesn’t get more picture postcard than this! Sault is a great base for this holiday as it is a bustling town. You can take the time to explore the streets, admire the Notre Dame church dating back to the 12th century or follow the hour long walking itinerary ‘in the footprints of the wolf’ and get up close and personal with the history of the town.

The Boyer nougat factory is another must see. Located in the centre of Sault, this small shop displays and sells typical local products. If you have a sweet tooth, then you are in for a treat! Guided visits are open to public in summer (subject to availability).

Wednesday is market day in Sault (and has been since 1515!). Here you can mingle with the locals and admire the selection of fruit & veg as well as local produce and Provençal textiles.
